Cheese and beer

With the Café Belge team in the country we had to do a cheese & beer-pairing. It is a far better marriage than cheese & wine will ever be. The tannins in a lot of wines will clash with the rather sharp and salty character of most cheeses. Another reason is that beer refreshes your palet more because the CO2, but also because of the bitterness or sourness. And on top of that more aroma’s and flavors will match.

Frédéric Van Tricht grew up with refined cheeses, wines and beers. So it wasn’t a big surprise that he followed into his father footsteps. Together they run the cheese store & ripening room in Brewery De Koninck. Especially the lovely sweet sour Liefmans Goudenband made a big impression. It combines beautifully with the blue cheese Roquefort.
